Glazed French Shallots
Serves 4
20 shallots
2 oz. Butter
1 tb. sugar
Salt,pepper
Peel the shallots
Melt butter in heavy-bottomed pan.
Add the whole shallots. Sprinkle with sugar. Season to taste with salt and pepper.
Just cover with water and cook over a high heat until the water has completely
Evaporated, stirring from time to time with a wooden spoon.
